This wine is made in classic Burgundian style lots of whole bunch and punch downs kept to a minimum to allow for softer extraction. The wine was fermented spontaneously to showcase the site and variety. Old 300L French oak barrels were used to ensure some development without giving it the oak factor. The wine should be served slightly chilled and allowed to warm up in the glass to open-up and express itself.
Soil & Terroir:
Grapes come from Stellenbosch from old Bush vines situated in Helderberg region. Deep granite soils allow for natural low yielding vines with good acidity.
The wine shows notes of cherries, plum, raspberries, and some spice. The tannins are soft velvety and adds to the spice profile of the wine. The acid gives it some great mid-pallet tension resulting in a wine that over-delivers.
The wine may contain natural sediment and is not harmful or affects the wines flavour profile.
