The Madame Molly is crafted from 70% Pinot noir and 30% Chardonnay grapes bottle fermented for opulence and texture without compromising inherent vibrant fruit detail and natural freshness. All grapes were hand-picked and whole bunch pressed in pneumatic presses to collect the purest free run juice known as the cuvée. The base wine was bottled under crown-cap where it underwent secondary fermentation to produce delicate bubbles.
The wine remained on the lees for 7 years to develop the yeasty, biscuity flavours. After disgorgement the bottle was closed with natural cork for a further 3 years before being released for sale. The wine shows delicate aromas of citrus and a hint of marzipan with a lingering floral finish which is supported by a biscuity and yeasty undertone. This wine has a beautiful fine mousse that compliments the wine’s fruity freshness. The citrus and yeasty flavours carry through from the nose and coat the palate for a refreshing finish. Because of its pure drinkability, food isn’t a prerequisite, but Madame Molly makes for the perfect aperitif.
Food recommendation would be seafood, summer salads and the perfect partner to Sushi.
