Southerly aspects, combined with fresh maritime breezes provide ideal conditions for optimal ripening of the grapes. The grapes are sorted in the vineyard and then twice in the cellar, once as whole bunches and then as individual berries on a vibrating sorting table. Fermentation is then allowed to proceed with wild yeasts and the wine is matured for 24 months in the French oak barrels. The blend is made up of 33% Cabernet Sauvignon, 33% Syrah and 33% Merlot and boasts a juicy palate with sweet fruit, supple tannin and a bright acidity. Made to drink now through to 2022.
The Soaring Eagle is made to be fresh and fruit driven. Serve slightly chilled.
