Always handcrafted in small quantities.
Often described as the “heartbreak” grape – Pinot Noir has an unenviable reputation of being a temptress grape & extremely challenging wine to craft well. However, if you understand that terroir trumps all other factors & source fruit from the most ideal sites, it makes the pursuit of crafting a proper Pinot a little easier. Prime Pinot Noir from three vineyards in Elgin were selected for this wine. All fruit was hand-harvested at dawn & the winemaking was extremely traditional.
What can you expect?
A barrel selection was made & blended into the tank for four months before bottling, unfined & unfiltered. 2018 was a challenging, yet elegantly feminine vintage for Pinot Noir - ripe cherry, cranberry, strawberry compote & exotic spice intertwine with Black Tea, forest floor & hints of rosehip, all cloistered by ripe tannin, oak spice & savoury finish.
Food pairing?
This fine cool-climate Pinot pairs exceptionally well with grilled duck breasts, braised beef short rib, beef Wellington, coq au vin & other rustic farm fare favourites, as well as soft fromage & charcuterie or simply sipped on its own lightly chilled.
Serving suggestion:
This fine wine is best decanted a half hour to an hour prior to enjoying in a large bowled wine glass & served lightly chilled in warmer climes ‘n times.
